Ingredients:

  • 1 cup pure maple syrup
  • 1½ cups heavy cream (35%)
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour (for thickening)
  • 1 cup shredded sharp cheddar cheese
  • ½ block (4 oz) cream cheese
  • to taste salt & black pepper

Instructions:

  1. In a swissmar fondue pot, bring the maple syrup to a gentle boil over medium heat, cooking for 3–4 minutes.
  2. In a separate bowl, combine butter and flour to form a smooth paste (a classic roux). This will help thicken the fondue.
  3. Reduce heat to low and pour in the heavy cream. Stir until the mixture is hot but not boiling.
  4. Whisk in the butter–flour paste until the fondue begins to thicken, 1–2 minutes.
  5. Add the cream cheese and whisk until fully melted and smooth.
  6. Add the shredded cheddar gradually, stirring constantly until melted and smooth.
  7. Season with a pinch of salt and black pepper.
  8. Transfer fondue pot to lit rechaud and serve with bread cubes, apples, broccoli, roasted potatoes, or pretzels.

Poutine Fondue

Ingredients:
